Crust:
1/2 cup confectioners sugar
1 1/2 cups flour
1 1/2 sticks butter, softened, and sliced
Filling:
1 8 oz package cream cheese softened
1/2 cup sugar
1 tsp. Vanilla extract
Topping:
Fresh fruit. I like to use strawberries, blueberries, blackberries, raspberries, and kiwi
Preheat oven to 350 degrees.
Crust:
In a food procesor, combine the flour, confectioners sugar and butter. Process until it forms a ball. With your fingers press the dough into a tart pan. (I like to make individual ones) Bake for 12-15 minutes, until golden brown. Cool.
Filling:
Beat cream cheese, sugar and vanilla until smooth. Spread over the cooled crust. Add the fruit. Refrigerate for at least a half hour, serve.
