Pinto Beans

4 pounds pinto beans

1/2-1 cup salt

12 oz salt pork or 1 package bacon, diced small and cooked

2 TB bacon fat

 

Clean and rinse beans. Add to a large pot and cover completely in water.  Cook on high until the beans come to a boil. Lower heat to low, and cook until beans are tender. I start my beans around 10 am and let them cook all day.  We eat around 7 pm.  If you need to, they also can be cooked in a crock pot.  Check them periodically and stir.  Some water will evaporate, so add hot water as needed.  I like my beans a bit soupy, so I am adding water all day.  Once the beans are plump and soft, add salt. I start with 1/2 cup and add to taste.  Next, add the bacon fat and the cooked pork of your choice.  Allow to simmer another hour.  Serve

These go great with pico de gallo 🙂  and you can always make refried beans the next day 🙂
