Easy Corn Bread

3-4 Tb roasted green chili’s (I buy the jar from Costco, and have it in the fridge year round. You can also used canned)

1 Cup shredded cheese (my favorites are cheddar or pepper jack)

1 can 15.25 oz whole kernel corn

1 can 14.75 oz sweet corn cream style

3 eggs

3 pkg. Jiffy corn muffin mix

1 cup half and half

Preheat oven to 400 degrees. Mix all ingredients in a large bowl.  Use baking cups or grease a muffin pan. Fill muffin cups or greased pan 2/3 full with mix. Bake for 15-17 minutes, or until golden brown. Remove from oven when done, and spread a small dab of butter on tops. Enjoy. Makes about 28 muffins
