Calabacitas (zucchini) with Cheese

This is one of my favorite recipes. Especially during the summer when I can buy all the ingredients at the Farmers Market.

6 Calabacitas, cut into chunks

1/2 Medium Yellow Onion, cubed

3-4  Medium Tomatoes

1 16 oz Can kernel corn, drained

1 Medium Red Bell Pepper, chopped

1 cup cheddar cheese, cubed

1 cup Jack Cheese, cubed

3 Tb. Olive oil

1/2 tsp. Fresh Parsley Flakes, chopped fine

Heat olive oil In a medium pan over medium heat, add calabacitas, onion, tomato, and bell pepper. Cook 5-7 minutes. Add corn, and all remaining ingredients leaving out both cheeses, stir. Lower heat, cover, and steam until all vegetables are tender, not soggy. Add cheese, and stir again. Turn off heat, and serve when all the cheese is melted. Amazing!!
