Carrot Cake

This recipe, a family friend gave me a long time ago. It is the best carrot cake, I have ever tasted!

 

1 tsp. Salt

2 cups flour

2 cups sugar

1 1/2 cups oil

4 eggs

1 1/2 cups shredded carrots

1 cup chopped walnuts

1 TB. Cinnamon

2 TB. Allspice

1 TB. Nutmeg

1 1/2 tsp. Baking soda

2- 20 oz cans pineapple chunks

 

Pre heat oven to 375

Butter and flour a deep 9 by 9 pan.  Mix all ingredients together. Add the flour last, and beat well.  Bake for 45-60 minutes, until cake is golden brown, and a toothpick inserted comes out clean.

 

This cake goes great with homemade cream cheese frosting!
