The BEST Pumpkin Bread!

5 eggs

1 1/4 cups vegetable oil (I use the Kirkland signature oil)

1 can 15 oz solid packed pumpkin

2 cups all purpose flour

2 cups granulated sugar

2- 3 oz packages cook and serve vanilla pudding mix

1 tsp. Baking soda

1 tsp. Ground cinnamon

1/2 tsp. Salt

Pre heat oven to 325.

In a large mixing bowl, beat eggs. Add oil and pumpkin, beat until smooth. Combine the remaining ingredients in a separate bowl, and slowly beat into the pumpkin mixture.  Pour the batter into 3 greased loaf pans and bake for 45-55 minutes.

I like to toast pumpkin seeds and spread them on top before I bake. Yum. Yum
