Watercress Salad

1 LG. Tomato diced

1 LG. Cucumber, peeled and diced

1/2 Cup Parsley, chopped

1 Bunch watercress, trimmed and chopped

 

Dressing:

1/2 Cup, Olive Oil

Salt and pepper, to taste

2 TB. White wine vinegar

2 TB. Honey

splash of lemon juice

 

Whisk  all dressing ingredients in a bowl, and set aside.  In a bowl, combine the tomato, cucumber and watercress.  Drizzle the dressing all over the vegetables until coated, enjoy.
