This is a recipe from my Mama, but I have changed a few ingredients.
6-8 Tilapia fillets. I like fresh, but you can buy frozen and thaw before cooking.
2 limes, sliced
1 large red onion, sliced
3 Roma tomatoes
1 bunch cilantro, washed
Olive oil
salt
fresh ground pepper
Preheat oven to 350
Cut medium size squares of aluminum. Take one square and on top of it place 2-3 Tilapia fillets. Add 1/2 tsp. olive oil, salt and pepper to taste. About 1/2 -1 tsp. Then layer some onion, lime, tomato, and cilantro. Wrap into a tight packet. Continue until all packets are done. Bake in preheated oven for 25-30 minutes or until fish is cooked.
I place a cooked packet on a plate, and serve just like that. You can remove the fish and vegetables and serve with some white rice.
