Mexican Shrimp Cocktail

2 Pounds medium shrimp, cooked. I buy the frozen ones at Costco and just thaw under cool water

2-3 Stalks Celery

1 Medium Red Onion, chopped

1 1/2 Cucumbers, chopped

4 Roma Tomatoes, chopped

1/2 Cup Cilantro, chopped

4 Limes, Juiced

2 Large Avocados, diced

Tostada Shells, Tortilla chips or Crackers

1- 16 oz Bottle Clamato Juice – Optional

2- 6 oz Cans Crab Meat, with juice

2- 6.5 oz, Cans Minced Clams, with juice

 

 

Salt and Pepper, to taste

 

In a large bowl, mix all ingredients, leaving out the avocado. Check to see if more salt is needed. Stir gently and refrigerate 2-3 hours. Before serving, add avocado and enjoy.
