Lime, Tequila Chicken

1 cup of Tequila

5 limes

1/4 cup olive oil

2 1/2 tsp. Salt

6 cloves garlic

1 Jalapeno (I like to cut it in half and remove all the veins and seed with a spoon, however if you like spicy just use the whole thing) stem removed

1/2 bunch cilantro

6-8 Boneless, skinless chicken breast’s  (I like to slice each breast into about 5 slices, it allows the individual piece to cook on the BBQ so the chicken is not completely dry)

In a food processor, squeeze and add the lime juice. Add Tequila, olive oil, salt, garlic, jalapeno and cilantro. Blend until combined. I let it go a few minutes, or else you will end up with a big chunk of something. Add the thin slices of chicken and the Tequila mixture into a large Ziploc bag. Marinate in the fridge for several hours or over night, then BBQ.

I like to use this chicken for tacos. Flour tortillas, lime, avocado slices , tomato slices and shredded cheese, amazing!! I have also used this Chicken as a salad topping.
