Delicious, Moist, Meat Loaves

1 TB. Olive oil

1 large onion, chopped

1/2 cup celery, chopped

1 tsp. fresh thyme leaves, chopped

2 tsp. salt

1 tsp. pepper

2 TB. Worcestershire sauce

1/2 cup chicken stock

1 TB. Tomato paste

3 pounds ground chuck

1/2 cup Italian bread crumbs

2 large eggs, beaten

1/2 cup Ketchup

 

Preheat the oven to 350. In a medium pan over medium heat, add the olive oil, onion, celery,thyme, salt and pepper. Cook until onions are tender. Remove pan from heat, and add the Worcestershire sauce, chicken stock and tomato paste. Cool. In a large bowl, combine the ground check, onion mixture, bread crumbs and eggs, stir with a fork until combined. Divide the mixture into 6 portions, and shape each into small loaves.  Spread 1 TB. of ketchup onto each one .Cook for 40 minutes, or until the loaves are cooked through. These go great with Mashed Potatoes!

 

When the loaves are done, I like to throw them in the broiler for a few minutes, to get get the top nice and crispy, but keep an eye on them so they don’t burn.
