2 Pounds fresh spinach, washed and stems removed
2 TB Butter
1 Medium yellow onion, thinly sliced
2 Cloves garlic, minced
1 tsp sea salt
1 tsp fresh ground pepper
1/2 tsp nutmeg
1/2 Cup heavy cream
Melt the butter in a medium pan over medium heat. Add the onions and garlic, cook until the onion starts to look transparent. Add the spinach and cook, stirring until liquid is released. Add the cream, salt, pepper and nutmeg, cook until the cream is reduced by half. Check salt and pepper, add if more is needed. Serve
