Simple Greek Salad

Salad:

1/2 Bunch romaine lettuce. Rinsed, dried, and chopped

2 Whole ripe roma tomatoes, rinsed, wedged, and sliced in half

1/2 Cucumber, peeled, diced

1/2 Red onion, thinly sliced,

15 Kalamata olives

3 oz Crumbled feta cheese

Fresh Parsley

Dressing:

1/3 – 1/4 Cup olive oil

2 TB Red wine vinegar

1 tsp Sugar

1 Clove garlic, minced

1 whole lemon, (this is optional)

Salt and pepper to taste

Combine all ingredients for the dressing, and chill in the fridge for about 30 minutes.  Add all salad ingredients in a bowl, and toss. After the dressing is chilled, drizzle on top. The lemon can be squeezed on top before serving. All ingredients can be adjusted to personal taste. I added extra feta.
