1 1/2 cups Quinoa
kosher salt
2 cups water
Dressing:
1/4 cup olive oil
1/4 cup fresh orange juice
2 TB fresh lemon juice
Sea salt
fresh ground pepper
1- 15 oz can garbanzo beans, drained
1/3 cup fresh flat leaf parsley, chopped
Whisk all the ingredients for the dressing, except the parsley and garbanzo beans, set aside.
In a medium sauce pan bring 2 cups of water, the quinoa, and 1 tsp sea salt to a boil over medium/high heat. Reduce the heat to a simmer, cover the pan and cook for about 12-15 minutes. Fluff with a fork, cover the pan and allow to sit for another 15 minutes.
Place the quinoa in a large serving bowl, and add the dressing, beans and parsley. Toss until coated. You can add more salt at this time.
For something different, you could add some crumbled Feta cheese, or grilled Tofu (I am not a big fan of Tofu, but in this recipe it is super good)
